I'm SO TIRED of fermentation weights that let stuff FLOAT to the top.

Know exactly what you mean, it's super annoying. A good weight should mostly keep things down, but sometimes a sneaky piece (like a spice or a seed) will find a way up the side. @kimk58 is right about the purpose, but the thing is, the weight's main job is to keep the big stuff submerged so mold doesn't get a chance to start. If a tiny bit of parsley floats, it's usually not a big deal. Just make sure your lid is on right to keep the air out.

Using tile levelers should be standard, no excuses

Heard a contractor say skipping levelers actually costs more time fixing lippage later. Makes you wonder why anyone would risk a callback over a few cents per tile?
