Scratches happen. Check if the trace is actually cut with a multimeter. If it is, just run a small wire over the gap and solder it down.

Restaurant kitchen upgrades are becoming a big part of my work schedule

Basic is the new luxury. How many places will we lose because they can't afford to swap out a twenty year old fridge? The owners are getting squeezed from every side. They have to pay for these big upgrades or risk getting shut down, but the money has to come from somewhere. It's pushing everything toward chains and bigger groups who have the cash, which makes every town look the same. A working kitchen shouldn't be a special treat, it should be the bare minimum we expect.
