No kidding, it feels like every place is doing some kind of renovation right now. Between new health codes and everyone trying to keep up with the competition, owners don't have much choice. I bet you're seeing a lot of old walk-in coolers and hood systems getting replaced because they just can't keep up anymore. It's not just about looking fancy, it's about needing stuff that actually works and meets the new rules. That old equipment becomes a real headache for both safety and getting orders out on time. Pretty soon a basic, functioning kitchen will be the biggest advantage a spot can have.

They're choosing between a broken compressor today and a loan payment for the next five years. That kind of pressure doesn't just change the scene, it quietly removes the quirky spots that give a town its flavor.

Basic is the new luxury. How many places will we lose because they can't afford to swap out a twenty year old fridge? The owners are getting squeezed from every side. They have to pay for these big upgrades or risk getting shut down, but the money has to come from somewhere. It's pushing everything toward chains and bigger groups who have the cash, which makes every town look the same. A working kitchen shouldn't be a special treat, it should be the bare minimum we expect.
