My buddy roasted my pork chops and now I brine everything
Ngl I used to just season raw pork and throw it in the pan. Then my friend tried one and said it was drier than his ex's texts. After he showed me a simple salt water brine for 30 minutes the texture changed completely. Anybody else have a cooking habit they stuck with after someone called them out?

You mentioned dry brine for chicken, does that work better than wet brine on ribs?

You ever try a dry brine on a whole chicken? I was the same way about pork chops until my brother told me my chicken tasted like a cardboard box. I switched to salting it the night before, leaving it uncovered in the fridge, and it turned out way better. Now I do that for pork chops too, just a few hours instead of overnight. The skin gets crispy and the meat stays juicy, no soggy mess from a water brine. It's more work to plan ahead but worth it for not getting roasted again.
