Thinking of how we used to cook without timers, I finally trust my instincts.

I burned a lot of roasts learning, but now I can tell by smell. Do you rely on timers or senses?

My mom never used a timer for her pot roast, and I burned three of my own trying to copy her. Now I can tell by the meat's smell when it's ready to fall apart. I had to fail a lot to trust my nose instead of the clock. It feels like a superpower now, not needing to check the time. That instinct is what makes cooking feel real, not just following steps.

Wait, three entire pots of pasta? That’s a lot of sad, starchy water. Diana Palmer’s pot roast story hits the same way, that awful moment you realize you trusted the clock over your own senses. I had to throw out a whole box after my own horrible crunchy pasta fail.
