Shoutout to the line cook who showed me how to hold my knife

I always gripped the handle like a hammer, but he corrected my grip (thumb and forefinger on the blade) during a busy Saturday shift, and my speed and control doubled. Anyone else have a simple technique fix that made a huge difference?

My grandma taught me the same thing while making salsa, and I haven't chopped a finger since.

That grip change is everything. I worked for months with my wrist aching before someone pointed out the exact same thing. It feels wrong at first, but once you get used to having your thumb on the blade, you realize how much more you can actually steer the knife. It turns the tool into an extension of your hand instead of just something you're holding onto.

Oh man, I read an article once that called it the "pinch grip." It said that grip gives you way more control because you're steering from the blade, not the handle. Makes total sense now seeing it in action.
