My first head chef in Portland told me to never salt a steak before it hits the pan, and I believed him for years.

Honestly I used to think that too but @viola_allen changed my mind.

Wait, he said to never salt it? Not even right before? That goes against everything I've ever read. Salt needs time to actually get into the meat, even if it's just 40 minutes on the counter.

Yeah, salt right before works fine for me every time!

That's wild, I always salt mine way ahead. It pulls out moisture so the crust gets way better. Your old chef was just wrong lol.
