I finally stopped using cheap sheet pans and it cost me a week of sleep
Honestly, I thought a $12 sheet pan from the grocery store was fine for years. I used them for everything from roasting veggies to baking cookies. Last month I had a huge catering order for 200 cookies and two of my pans warped in the middle of the bake. The cookies slid off into a pile on the oven floor and I lost about 60 cookies worth of dough and time. I ended up staying up until 2am at my commercial kitchen in Austin rebaking everything on proper aluminum pans. Total waste was around $40 in ingredients and 6 hours of labor. Now I only use half-sheet pans from a restaurant supply place and they don't bend at all. How do you guys test if a pan is gonna hold up before you buy it?

My $12 sheet pan from IKEA has outlasted every expensive one my sister ever bought.
