Wait, they think a cast iron pan is the only way to get a good crust? Have they ever tried a carbon steel pan? It gets screaming hot, it's lighter, and the crust is just as good, if not better. I feel like people just repeat the cast iron thing without trying anything else. It works fine, sure, but calling it the only "proper" way is just silly.

Totally agree. Carbon steel is the secret weapon. It heats up so fast and handles like a dream. The cast iron crowd is just stuck in their ways. Both are great, but saying only one works is just wrong.
