Update: chose between wrapping at 3am or sleeping, and the brisket got revenge
Had two 14 lb packers on the offset at my buddy's place in Amarillo and hit the stall at 11pm, so I had to pick between wrapping in butcher paper and riding it out till 3am or crashing on his couch. I picked sleep and woke up to temps at 175 with the bark looking like a charcoal briquette, then foiled them and somehow pulled it off at the 2pm turn-in. Any of y'all ever gambled on the stall and lived to tell it, or am I the only fool who naps through the crutch?
Did you actually hit the stall at 11pm or did you just assume it? A 14 lb packer usually stalls closer to 165 and that can happen way earlier than 11 depending on when you put it on. Sleeping through the crutch is a real gamble but plenty of folks ride it out, you just have to know your pit and watch the bark, not the clock.
