The great brisket stall debate: wrap it or let it ride?
I fought a brisket for 6 hours past my usual stall time because I refused to wrap it. The bark was perfect but I almost served dinner at midnight. Has anyone else stuck to their unwrapped guns and regretted the time loss?

Have you tried just letting it go longer on a lower temp? I get where you're coming from but I've wrapped plenty of briskets and found the bark gets soft no matter what I do. Last time I tried foil I ended up with more of a pot roast texture than brisket. I'll take a late dinner over that any day.
