inMy sourdough starter took a full three weeks to get bubbly because my kitchen was too cold.
Seems like extra work to me. My starter always does fine on the counter, even when it's chilly. Maybe some starters are just weaker?

That soaking step adds a whole extra half hour I don't have. I just toss them straight from the bag into my air fryer with a little oil spray, and they come out plenty crispy for me. The extra work isn't worth the small difference.
