Is it ever really okay to skip a step like that? Look at what happened to @richardhernandez's buddy, that floor job turned into a huge mess. Moisture tests are not just a suggestion, they stop problems before they start. Skipping any safety check is basically hoping you get lucky, and that's a bad plan. It might take a few extra minutes now, but it saves days of work later.
