The way most people store their coffee beans is dead wrong

Walked into my buddy's kitchen last weekend and saw his bag of beans sitting right on the counter next to the stove. I told him that's basically a fast track to stale coffee. The heat from cooking and the sunlight from the window are killing the flavor in like 3 days. I keep mine in a sealed jar inside a dark cabinet and the difference is huge. Anybody else have a friend who thinks they know coffee but stores it terrible?

Ngl, you mentioned the bag being right next to the stove and that's the part nobody talks about. That constant heat cycling when you cook is probably worse than sunlight for wrecking the oils.

I mean is it really that big of a deal though. I've kept bags of beans on my counter for weeks and they tasted fine to me. Maybe I just don't have a refined enough palate to notice the difference, but I feel like people get real dramatic about this stuff. Unless you're leaving them out for months I doubt it's ruining your whole coffee experience.

susanb34 do you think the heat kills the oils faster or just changes how they break down over time? Like is it a chemical thing or more about moisture getting cooked off?
