The new place on Oak Street cooks EVERYTHING sous-vide and folks love it. I think it kills the flavor. A good sear beats it ANY day.

That slow herb soak sounds nice, but I miss the smell of dinner cooking in the kitchen all afternoon.

Sous-vide lets herbs soak into the meat perfectly (like in their pork chops). A fast sear at the end gives you that crisp without drying it out.

Rosemary and garlic in my first sous-vide pork chops changed my view. The slow cook lets herbs soak into the meat way better than I ever got with just pan frying. That fast sear at the end really does keep it juicy while adding crunch.
