I saw what @the_harper said and it reminds me of watching line cooks trash talk prepped stuff, then quietly grab it from the lowboy when the tickets stack up. The knife skills pride just goes out the window.

Yeah, I finally tried the pre-chopped last week during a crazy dinner service. Honestly, the quality was way better than I expected and it works fine.

Totally get that rush hour panic. But calling it "pre-chopped" is kinda broad. The bagged mirepoix from the store is a lifesaver, but the pre-peeled garlic in water tastes totally different. It's all about picking the right shortcut. Some stuff keeps its flavor, other things just get weird and rubbery.
