My new scabbard sharpener was a total waste of $150
I saw a demo at a trade show in Chicago last fall and thought it would save me time on the line. It's this electric thing that's supposed to sharpen a boning knife in under a minute. After three weeks of trying, it just heats the blade up too much and ruins the temper. I'm back to using my old hand stones and the edge is way better. Has anyone else tried one of these and gotten it to work right, or should I just sell the thing?

Yeah those demo units are a total trap, they run them slow with a brand new blade and perfect pressure. The real problem is most kitchen knives have different grinds, so that one size fits all angle just cooks the steel. I tried a cheaper one years ago and it was the same story, ended up giving it away.

What brand did you get, and did you check if there's a specific angle setting you missed? Those demo units are always tuned perfectly, but the real ones can be really finicky about blade thickness.

Trust me ray356, I'm so bad at this I probably set it to "slice fingers" mode by accident.
