Fermented hot sauce turned my kitchen into a science lab

Tbh I left a batch of habaneros in brine for 11 days instead of the 5 the recipe said, and the bubbles made me nervous but the flavor got this deep smoky kick I can't replicate with vinegar. Has anyone else accidentally aged something longer and gotten a better result, or did I just get lucky?

The 11 day mark is exactly where my last jalapeno batch landed, and I almost dumped it because I was scared of the funk. Three weeks ago I would have told you to follow the recipe to the minute or you're just making a science project. But after tasting that deeper, almost roasted edge from the extra time, I've totally flipped on this. Now I'm the one arguing with my friends that patience beats vinegar every single time. You didn't get lucky, you got smart, and I'm honestly jealous of that smoky kick.
