Hit 100 briskets smoked last weekend. Never thought I'd get there.

Started keeping count two years ago after a buddy dared me. Finally cracked triple digits on Saturday with a 16 pound prime packer from Costco. Used a mix of oak and hickory on my offset. Took 14 hours but the bark was perfect. Anyone else keep a tally or am I just weird?

I was reading this article the other day from Texas Monthly about keeping logs of cooks and plenty of people do it. They said a lot of the competition guys track everything down to wind speed. 100 briskets is no joke though. I've been at it for maybe 5 years and I bet I'm barely past 30. The thing that gets me is how different each one can be no matter how consistent you try to be. That 14 hour cook sounds right on though. My best briskets always come off a long slow cook with a good wood mix.

Man, I keep a tally of everything (including how many times I've dropped tongs in the grass, which is way higher than I'd like). 100 briskets is seriously impressive though - I think I'm stuck around 40 because every time I nail a brisket I get cocky and try to trim one blindfolded or something stupid like that. My last one came out so dry it could've been used as a firestarter for the next cook. You've got my respect for that kind of consistency, especially with the oak and hickory mix (my offset is still mad at me for trying to use too much mesquite that one time).
