You know what, I used to think chilling was just about the dough not melting too fast. But you're totally right. I did a side by side test last week, one hour vs overnight. The overnight batch barely spread at all, they stayed so thick. The one hour ones looked like sad little coasters. Never skipping the long chill again.

Honestly milam48, I get the overnight hype but sometimes you just want cookies now. Tbh my one hour chill last week gave me perfect crispy edges and soft centers, they didn't spread into puddles at all. I think it depends on your recipe, mine has a bit less butter so it's not as needy for a super long fridge time. The texture was still chewy and good, not sad coasters.
