Splurged $180 on a sugar thermometer kit, my caramel game is actually alive now
Had 3 straight failed batches of caramel last month, burnt sugar everywhere, kitchen smelled like a campfire. Finally dropped $180 on a digital probe kit with a clip-on reader from a shop in Austin, and it reads temp every 2 seconds. Now I hit the exact soft crack stage every time. Has anyone else found one specific tool that killed their biggest baking chaos?

My sister got one of those laser thermometers for her grill and now she's obsessed with checking the temperature of literally everything, including her coffee and the dog's water bowl. She showed up at Thanksgiving with a binder of temperature logs for turkey doneness. The caramel sounds way more practical than her system, but now I kind of want to borrow her laser gun just to point at random stuff around the house.
