I thought rinsing rice 3 times was enough until my aunt from Seoul watched me do it
She grabbed the pot and rinsed it 6 more times until the water ran clear, and the rice came out way fluffier than mine ever did. How many times do you all rinse before cooking?
My Korean friend Sunhee made me rinse until the water was totally see through and it took like 8 rounds. I always thought 3 was plenty too but now I can taste the difference. The starch is what makes it gluey so getting it all out gives you those separate fluffy grains. Now I just rinse and swish with my hand until it stops looking cloudy, usually 5 or 6 times. Takes an extra minute but worth it.
My buddy Marcus had the SAME thing happen with his mother in law from Busan. She watched him do 3 rinses and just shook her head, then took over and did like 7 more until it was basically clear water. He said the rice was on a whole other level after that, way less sticky and each grain stood on its own. Now he won't even let anyone else rinse the rice in his house.
