I finally figured out why my sourdough starter works better with filtered water
Switching from tap water made my bread rise consistently every time.

Oh man, @andrew_palmer, that's so good to hear. It's funny how the same thing can be a total game changer for some and just okay for others, you know? I saw a huge jump in results after sticking with it for a full month. Makes me wonder if some people just give up too early before it really kicks in.
