Appreciation post: Switched from a standard mandoline to a Benriner for my beet prep

I was doing 15 pounds of beets for a pickling project and the old mandoline was tearing them up, making a mess. The Benriner's blade was just sharper and the grip was better, so my slices were perfect and way faster. Anyone have a favorite brand for julienne blades on these things?

I used to think that guard was overkill too, but after a close call, I get it now.

Just remember the finger guard, that blade is no joke.
