Picked the stable job over the dream job, still wondering sometimes

Back in 2019 I had to choose between a kitchen manager spot at a chain in Phoenix or a line cook gig at a James Beard place. Took the chain for the insurance and regular hours. The fancy place closed during covid anyway, so I guess it worked out, but I still think about what I would've learned there. Anyone else make the practical choice and regret it later?

That whole thing plays out everywhere though. You see it with people who skip the artist life to do accounting, or pass on the startup to take the city job with the pension. The grass is always greener because the road not taken keeps looking better in your head. But honestly, most of the time the practical choice buys you the freedom to chase smaller dreams later, like painting on weekends or taking a cooking class. The dream job ain't guaranteed to stay a dream once you're living it, either. Sometimes it turns out the fancy place had a toxic kitchen and you dodged that bullet. You'll always wonder, but wondering is cheaper than starving.
