Hit my 10,000th chicken breakdown last Tuesday and just stood there like a fool
I was doing my normal Tuesday prep at the shop in Boise and when I finished the last bird I did the math in my head and realized that was number 10,000 for me. My hands just kind of froze over the cutting board because I started wondering how many of those birds I butchered clean and how many I mangled back when I was green. Any of you old timers ever hit a number like that and have it mess with your head for the rest of the shift?
Ten thousand is a big pile of birds, no doubt, but I don't think the mangled ones deserve to be lumped in with the clean cuts like they cancel each other out. Every one of those sloppy early breaks taught your hands where the joint actually sits, so the number is really just the sum of getting better at it. Standing there doing the math is fine, but the birds you wrecked are the ones that got you to ten thousand in the first place.
