Hit 1,000 whole chickens broken down this morning and I honestly did not see it coming
I keep a little tally on the back wall of my walk-in, one mark per bird, and this morning I put up mark 1,000. When I started at the shop on 9th Street back in January I figured I'd maybe hit 400 by now. The first 200 took me almost two months because I was slow and scared of wasting breast meat, then something just clicked around the 300 mark and my yield stopped bleeding. My boss checked my numbers and said my waste is down to under 2 percent, which is better than guys who've been here longer. Any of you keep a count like this, and did it actually make you faster or was it just a head game?
