Last Tuesday I stretched a pound of ground beef into four meals and it felt like a win

I had a day last week where everything just lined up. I found a pound of ground beef on sale for $3.50 at the Stop & Shop in Worcester. I stretched it into tacos one night, a pasta sauce the next, then mixed the last bit with rice and beans for two lunches. It reminded me of how my grandmother used to make a whole pot of soup from a single chicken thigh back in the 90s. Food prices are wild now compared to then, but that one lucky shopping trip made me feel like I was beating the system for a day. Anyone else have a random week where the grocery budget just worked out?

Honestly I used to roll my eyes at people bragging about stretching meat like that, but after my last grocery bill I get it now. Seeing how far you made that pound go actually makes me want to try harder with my own shopping, especially since I used to think it was just being cheap. That soup story about your grandma's chicken thigh really hits home too, makes you realize how much we waste without even thinking about it.

Wait, a SINGLE chicken thigh for a whole pot of soup? That's insane. I can barely make soup with two or three chicken legs these days. My grandma in the 80s was the same way though, she'd make a whole weeks worth of meals from some scraps and a couple bones. That ground beef trick you pulled is solid too, I've been doing the same with the 80/20 packs from Market Basket. Beans and rice are basically a cheat code now with how expensive meat has gotten. Its crazy how much we've had to go back to those old habits just to eat decent.

Stood there reading that and had to double check the date on the post. A single chicken thigh for a whole pot of soup? That's wild. My grandma used to do the same thing with a ham bone, would get like three meals out of it before she gave up. Makes me wonder what we're doing wrong now, cause I feel like I burn through a whole pack of chicken thighs just for one dinner.
