Warning: wrapped my brisket at 3am and forgot to check the temp probe was in the meat, not the foil
At a backyard cook in Fort Worth last Saturday I wrapped two 14 lb packers in butcher paper around 3am, then went back to sleep thinking I was sitting pretty. Woke up at 7 to a pit reading 275 with both probes stuck in folded foil instead of meat, so I had no clue where either brisket actually stood. Pulled them, reinserted the probes, and found one was already at 209 while the other sat at 178, which meant one was heading for mush. I foiled the hot one and let the cooler one ride another 90 minutes, and somehow both sliced okay, but it was pure luck. Anyone else get lazy with probe placement on an overnight cook, and do you double check before you walk away?
