Shoutout to the backyard hero who ran his offset smoker with a hair dryer and a folding chair
Saw a guy at the park in Tulsa last month running a cheap offset with a hair dryer duct taped to the firebox door and a folding chair for his feet. I used to be that guy, all stressed, poking coals every 10 minutes and chasing temps all afternoon with a bad thermometer. Now I run a cheap baffle plate and just let the fire breathe on its own, maybe two splits an hour, and my ribs come out better than when I fussed over them. It took about 5 cooks of ruining food before I stopped fighting the smoker and started reading what the coal bed was telling me. Funny thing is the hair dryer dude's brisket looked better than mine did for my first two years, so maybe the fussing was never the point. What's the weirdest thing you have seen someone use to keep their fire going at a cookoff or a park?
