My neighbor's leftover sourdough starter changed my baking streak

A few weeks back, my neighbor knocked on my door and handed me a jar of her sourdough starter, said it was 'too much for one kitchen'. I fed it for 3 days straight, made my first loaf that was more brick than bread, but the second one actually had those airy holes you see in magazines. Has anyone else gotten a starter from someone and felt like you owed them a perfect loaf back?

Did you try baking with the discard on day 4 or 5? That's when mine finally stopped tasting like a science experiment and started acting like real dough. I found that keeping the starter in the fridge between feeds slowed things way down, which took the pressure off and made each loaf way more fun to make.

Did your discard pancakes come out smelling like feet too, or was that just my kitchen?
