Cold butter vs. melted butter in cookies, I finally have an opinion
I did a side by side last Saturday with the same dough recipe, one batch chilled overnight and one with melted butter straight into the bowl... the melted ones spread like pancakes but the flavor was actually richer? Anyone else think the texture tradeoff is worth it or am I just lazy?

Oh man, this brings back a memory. My friend Sarah tried the melted butter trick once for a bake sale and her cookies came out so flat they looked like lace doilies. She was mortified, but then everyone at the sale kept going back for those ugly ones because they had this deep, almost caramelized taste. She still swears by melted butter now, even though she has to warn people not to judge by looks. I get the appeal, but for me, that spread factor is a dealbreaker unless I'm okay with cookie pancakes. Your mileage may vary though, some folks really love that crispy edge situation.
