The old baker in Portland who showed me how to test proof with my elbow, not my finger
Stopped by a small bakery on SE Division in Portland last month while visiting my sister. An older guy named Walt was pulling loaves and I asked how he knew when the dough was ready. He poked it with his knuckle, then grabbed my arm and pressed my elbow into the dough instead. Said fingers lie but elbows feel the spring better. Been doing it at home for 3 weeks now and my loaves come out way more even, has anyone else heard of this?
