I finally got the morning bake done without any mistakes

I've been struggling with the early shift at the bakery for months. My manager pointed out I was always rushing and messing up the croissants. Today, I took my time and followed the steps exactly. Everything came out perfect, and my coworker even gave me a thumbs up. It feels good to see my hard work pay off.

Remember reading how good bakers say patience with dough isn't just waiting, it's trusting the process. Sounds like you found that zone today where rushing stops and things just work. Really cool to hear it clicked for you.

So did you finally just accept the dough is gonna do whatever it wants until it's done? I'm kinda jealous, I tried to make puff pastry at home once and I still have butter in places butter should never be. It takes real skill to not panic when everything is time sensitive like that.

How did you not totally lose it when the butter went everywhere, @norathomas? That takes some next-level patience.

Is baking dough really that hard to handle? It's just flour and water, not some complicated task. Butter mess is annoying but you wipe it up and keep going. Acting like dough has a mind of its own seems silly to me. It's cooking, not a nerve wracking event. If it goes wrong, make something else or try again later. Getting stressed over pastry is not worth the energy.
