Serious question, trimming my own brisket turned out way better than the $90 butcher job
About 3 weeks ago I bought a whole packer brisket for $62 at the HEB on Bunker Hill and decided to trim it myself instead of paying the butcher $90 to do it. My first try took 45 minutes and looked like a crime scene, but I watched one 12 minute video twice and the second one came out clean. The flat cooked way more even than the last two I had trimmed by the guy at the counter, which I did not expect at all. I always assumed paying a pro was the safe move, but now I think half of them just rush it because nobody's watching. Anybody else notice their own trim beating the shop's, or did I just get lucky on a good piece of meat?
