Man, that's so true about life in general. We get these hard rules in our head about the "right" way to do things. Like, I used to insist you had to hand wash a cast iron skillet, no soap ever. Then I saw my grandma, who's used the same pan for 50 years, use a tiny bit of soap. The sky didn't fall. The pan was fine. We cling to methods as identity, when really it's just about getting the job done well.

My sourdough starter went totally flat after I moved it to a new spot

Yeah, that gray puddle is rough. Wilson.joseph is right about the warmth, reminds me of the time my starter got weird after a power outage. Just kept it on top of the fridge for a week.

Look at the stars from different places on earth... you see totally different sets of them. That only makes sense if we're on a ball. Sailors have used that for navigation forever, long before NASA. The horizon thing is solid too, you can watch a boat go over it with your own eyes. His points sound logical until you check them yourself, which is what he says to do. The curve from a plane window is subtle, but there are videos from high-altitude balloons that show it clearly. It's easy to get stuck on the questions if you don't look at all the answers that are out there.
