Trying to dial in my new grinder took a whole weekend

Got a new Baratza Encore and thought I'd have it set up in an hour. Ended up wasting two full bags of beans from my local spot, The Daily Grind, trying to find the right setting for a V60. It just kept coming out either way too sour or super bitter. Finally got a decent cup on Sunday night after like 15 tries. Anyone have a good starting point for a medium roast on this thing?

Holy cow, TWO whole bags from The Daily Grind? That's a genuine tragedy right there. I would have cried over the waste and the cost. Glad you finally got it sorted on Sunday, man.

Waste is one thing, but the real tragedy is drinking bad coffee all weekend. Those two bags were just the cost of learning the new grinder. Dialing in a pour over is part of the process, not a failure. You can't get it right without getting it wrong a few times first.

Saw a video that said start around 20 for a V60 with medium roast. That grinder is known to need some dialing in though, total bean killer at first.
