Question about how long it took me to finally get composting right in my apartment

I started a little bin on my counter 8 months ago and it took me 4 tries before the fruit flies finally stopped showing up. Turns out I wasnt draining the bottom enough and everything turned into a sludgy mess. Anyone got a trick for keeping the smell down in a small kitchen?
