Why does nobody warn you that a dull bench scraper will wreck your prep in 3 days?
I sharpen my knives every Sunday like clockwork, but I let my bench scraper go for about 4 months without touching the edge. Last Monday I noticed my onion dice was taking almost twice as long and my cuts looked ragged, and I blamed it on being tired from a double shift. Then I grabbed the scraper to scoop a batch off the board and it kept skidding and smearing instead of lifting clean. I ran a stone over it for 90 seconds, just 90, and the difference was nuts. Suddenly I could scoop a full pint of mirepoix without it spraying everywhere, and my board stayed way cleaner during service. I felt dumb for letting a $12 tool slow me down for months. Anybody else have a small tool they ignore way longer than they should?
