My roommate called my rice and beans "beige sadness" so I bet him $10 I could fix it with one jar
Back in March my roommate watched me scoop plain rice and canned black beans into a bowl for the third night in a row and said it looked like "beige sadness," which honestly stung because he was right. I bet him 10 bucks I could make the same meal taste good without buying anything fancy, and I went to the corner store in my neighborhood and grabbed a $2.49 jar of salsa verde. The trick was cooking the rice with a spoon of the salsa and a pinch of cumin, then dumping half the jar into the beans while they simmered with a chopped onion, and the whole pot came out tasting like something from a taco place. My roommate took one bite, paid me the 10, and then asked if I could make it again the next night, which meant I won twice. I still make it about twice a week now and the total comes to maybe $1.40 a serving if I catch the beans on sale. My one regret is that I dumped in the whole jar the first time and it was way too salty, so start with half and taste as you go. Has anyone found a cheap add-in that punches above its price like that salsa did? I am looking for the next one to try.
