I used to think frozen veggies were the sad option, but after a rough paycheck month in Austin, I grabbed a 2-pound bag of mixed peppers and onions for $4. I tossed it into rice bowls and omelets for 21 days, and it held up way better than the fresh stuff that went limp in my fridge by day 4. The texture was actually fine once I cooked it fast on high heat, and I saved about $11 compared to buying fresh each week. Have you seen that comparison study from a few years back that tested nutrient levels in fresh versus frozen veggies? It stuck with me because the frozen ones actually kept more vitamins after a week, since the fresh had already been sitting in a store for days before you even brought them home. That really changed my view on stockpiling frozen broccoli and spinach for soups and pasta. I also noticed frozen green beans hold their snap way better than the fresh ones that turn rubbery in my crisper drawer by Wednesday.
