Tried swapping butter for mayo in my banana bread and the crumb came out crazy soft
I ran out of butter last Saturday while making banana bread for my sister's birthday in Boise, so I used half a cup of mayo instead and it baked up with the softest, moistest crumb I have ever gotten from that recipe. I figured it would taste like a sandwich but the mayo just disappears and leaves this really tender texture that my family finished in about a day. Has anyone else used mayo in quick breads, and did you cut the salt or keep it the same?
