I called air fryer hard boiled eggs a gimmick for 3 years, and a diner cook in Reno proved me wrong
I used to roll my eyes at anyone who said they boiled eggs in an air fryer. My old stove takes about 12 minutes for a decent batch, so why bother with a gadget that dries everything out? Then a short order cook named Dee at a diner off Virginia Street in Reno showed me her method during a slow Tuesday shift. She runs them at 250 degrees for 17 minutes, then straight into an ice bath for 5. I tried it at home that same week and the peels slid off in two big pieces, no pockmarked whites at all. I've done 4 dozen since and only one cracked, which beats my pot method by a mile. Has anyone tried this with really fresh eggs, or does it only work if they've sat in the fridge a week or so?
